This is one of my family favorites—the Beach Shack Pineapple Coconut Habanero Sauce adds a perfect contrast to the rich and savory beef.

Ingredients
4-5 lbs. pork butt
4-6 Russet potatoes
2-3 Carrots
1-2 medium onions or one large
4-6 cloves fresh garlic cloves
1 cup pineapple chunks- fresh or canned
1/2 cup Red wine- your favorite
1/4 cup water
2 tsp. salt
1 tsp. black pepper

1/2 cup Pineapple Coconut Habanero Hot Sauce
1/4 cup Olive oil
Directions
Prep the roast by trimming any excess fat, and cut into bite size chunks. Season with salt and pepper.
In a large pot, add olive oil, and heat to medium high, add a few pieces of meat at a time to pot to sear and brown on all sides, continue until all the meat are browned.
Transfer to crock pot
Wash potatoes and cut into bite size chunks.
Peel and cut carrots into bite size pieces.
Peel and cut onions into bite size pieces.
Add vegetables and pineapples to crock pot along with the pork, add wine, water and Pineapple Coconut Habanero Hot sauce.
Cook on high for 6-8 hours.
Serve with some warm bread if desired.
