Caribbean Spiced Chicken Kebobs
Caribbean Spiced Chicken Kebabs are a vibrant and flavorful dish, embodying the rich culinary traditions of the Caribbean. These kebabs typically feature chunks of chicken marinated in a blend of aromatic spices and herbs common to Caribbean cuisine. The key ingredients in the marinade usually include allspice, thyme, cinnamon, and nutmeg, often accompanied by garlic, ginger, and scotch bonnet peppers for heat.
1 lb. Chicken- breast, thigh…your choice
1 Large onion -cut into large chunks
1 lb mushrooms
1-2 Zucchini-cut into chunks
1-2 Squash-cut into chunks
1 Bell pepper- cut into chunks
1-2 tsp salt, pepper
2 tbs olive oil
wooden skewers-soaked water
Clean chicken and then cut into 1-2 inch cubes, place into a large bowl.Add about 1-2 tsp olive oil, Season with the Caribbean spice blend to your taste. Cover the bowl with plastic wrap and let the chicken marinade for at least 30 minutes. . You calso put eveything in a zip lock bag for easy cleanup.
Wash vegetables and dry, cut them into bite size pieces and place into large bowl.Add about 1tsp of olive oil. Season with salt and pepper to taste.
After 30 minutes, assemble the skewers with the chicken and vegetables, alternating chicken and each vegetables. Or put all chicken on each skewers and vegetables seperately, your choice.
Heat grill or grill pan to medium-high heat and place chicken on grill, cooked for about 5-8 minutes each side until cooked though. If cooking vegetables seperatley they should only take about 5minutes
Remove from heat and place on serving platter with your favorite side dishes.
Serve with coconut rice
